Recipe Corner: Delicious Chicken Salad Sandwiches

You can keep prepared chicken salad refrigerated for 3-5 days. Go Greek Chicken Salad Makes 2 servings; 1 serving (1 cup) = 173 calories 6 ounces of cooked skinless chicken breast, roughly chopped 1/2 cup choppped cucumber 1/3 cup cherry tomatoes, quartered 1/4 cup crumbled fat-free feta cheeses 1/2 cup plain low-fat yogurt (Dannon) 2 tablespoons light mayonnaise 2 tablespoons canned sliced black olives salt,pepper to taste 1. In a medium bowl, mix yogurt and mayo.

Step Ahead at Community Health Fair

Temple Beth-el in Hillsborough sponsored a health fair for the community offering many different services – blood pressure checks, blood glucose tests, dental tips and many other services. Step Ahead participated to increase awareness about the obstacles with obesity and offered educational material as well as tests for BMI and body fat percentage. The fair was a great success with many community doctors and organizations volunteering their time and services.

New Tests Recommended to Diagnose Diabetes A recent announcement by the American Diabetes Association has recommended a new test to help in the diagnosis of diabetes that will make it easier for both patients and doctors. The new recommendations are based on using the test – called the glycosylated hemoglobin or HbAic- to make the diagnosis. This test helps determine the average range of sugar in an individual’s system over the past 2 or 3 months

Sushiology

If I was stranded on an island and had to pick one food to eat for the rest of my life it would be, without hesitation, sushi.  For those of you who follow Sacfoodies, you know that I love making (okay, attempting to make) sushi rolls at home . So, when Mikuni offered the opportunity to attend their introductory Sushiology class I jumped at the chance. Mikuni’s Elk Grove and Roseville locations offer Sushiology classes, starting from the roll building basics up through making party platters.  I’ve made sushi at home quite a bit, but still learned some very handy tricks taking the first class in the series, 1A.  We attended the Elk Grove class, which is held in a private room.  There were 24 seats in the class (four per table) with the instructor’s table up front.  The size of the class is perfect – we got to know others in the room as we all tested our skills
